Considered a gourmet meal, we can count ourselves lucky to have the best lobster in the world. Often caught around PEI and les Îles-de-la-Madeleine in high season, our live lobsters all come from the Atlantic. Lobster meat is low in calories and is an excellent source of protein and omega-3s. To cook it, simply plunge your lobster headfirst in boiling salted water. As soon as it boils again, let the lobster cook approximately 10 to 15 minutes, depending on its size, before taking it out. (Count 13 minutes for a lobster of 500g). Remove the lobster and plunge it a few seconds in cold water to stop the cooking. Serve it with garlic melted butter or a nice lemon mayonnaise. Pro tip: Reserve your shells and make a bisque with a lobster stock.
