The Angus designation is a certification that attests to superior quality meat. These steaks have excellent marbling and meet certain specific criteria. It is suggested to roast it in the oven at 325°F or if you have more time at 275°F. The roast should be very juicy, as long as you don't exceed the internal temperature of 160°F (71°C), which is equivalent to a "medium". (Internal temperature for medium-rare: 63°C or 145°F.) Make sure to cover your roast with aluminum foil and to let it rest for about 20 minutes after cooking. This last step will make all the difference. Platinum Grill 238286
