It is a steak that is considered tender, even though it has denser fibers, but is also known to be very flavourful. It is cut in such a way as to have a fat cap running along the length of the meat. This fat cap will melt with heat, tenderizing your meat and giving it more flavour and juice. It is recommended that the steak be placed at room temperature for half an hour before cooking. Season your steak with salt and pepper or other spices at least 15 minutes before cooking so the seasoning is well absorbed.
