Preparation is simple, all you need to do is season your chicken with oil, salt, and pepper, then insert a halved lemon, garlic cloves and a bunch of fresh thyme and rosemary inside. Oil your roasting pan and place your whole chicken on its back. Place it in a preheated 350°F oven for about 1 hour and 45 minutes. (Allow about 20-25 minutes per pound.)
