In a big pot, melt butter and cook onions until glassy.Add garlic and cook for a minute. Deglaze with the Beaupré cider. Add chicken broth and bouquet garni.Simmer for 45 minutes.Toast baguette slices. Ladle soup into 4 soup bowls.Add 2 slices of toasted bread and ½ oz. (15 g) of grated cheese.Place bowls on a baking sheet and place under broiler to melt cheese.
