Cut each marshmallow crosswise into 3 pieces. Place the sprinkles in a small shallow bowl and dip one sticky side of each cut marshmallow to make a petal.Arrange 14 marshmallow petals overlapping in a circle 1” inch in from the edge of the pie. Arrange the remaining 7 petals overlapping inside the larger circle. Place the mini lemon tart in the centre.Pie can be kept frozen until ready to serve. Let thaw refrigerated for 2 hrs and garnish with mint leaves just before serving.

Preparation
