Pistachio and cranberry salmon:In a blender, pulse to a coarse grind pistachios, cranberries, almonds and dill for garnish.Cook salmon in an oven preheated to 350°F (180°C), for 6 minutes, then cover with garnish mixture.Return to oven for 8 to 10 minutes. Salmon should remain pink in the middle.Marbled mash:Boil sweet potatoes in water until tender.Drain and mash with nutmeg and butter using a hand blender. Set aside.Cook cauliflower and leek in boiling water until cooked.Drain and puree with a hand blender. Set aside.Using a spatula, create a marbled effect by carefully mixing both mashes together in the same bowl. Do not blend.

  • 3 lb
    (1 3/10 kg)
    salmon fillet
  • 2/3 cup
    (180 ml)
    salted pistachios, shelled
  • 2/3 cup
    (180 mL)
    dried cranberries
  • 1/4 cup
    (60 mL)
    slivered almonds
  • 1/3 cup
    (85 mL)
    fresh dill, chopped
  • marbled mash:

  • 3
    medium sweet potato, peeled and diced
  • 2
    pinches of nutmeg
  • 1 Tbsp.
    (15 mL)
    butter
  • 2
    large cauliflower, cut into florets
  • 3
    leeks, cut into rounds (white portion only)
  • 1 Tbsp.
    (15 mL)
    salt for cooking cauliflower

Preparation
