Preheat the oven to 350°F (180°C).In a saucepan, heat 1 Tbsp. (15 mL) of the oil over medium-high heat.Brown the meat on all sides, about 5 minutes. Set aside on a serving plate.In the same pan, heat the remaining oil over medium heat. Add the onion, apples, pears, ginger and 1/4 cup (60 mL) of apple juice. Cook for 7 minutes, or until the onion is translucent. Season.Add the broth, remaining apple juice and reserved coq-au-porc.Continue cooking in the oven for 45 minutes.Remove from the oven, cover the meat loosely with aluminum paper, and allow to rest for a few minutes before slicing.Meanwhile, if desired, simmer the cooking juices with the mustard and cream. Whisk to obtain a smooth sauce.Nap the sliced meat with the sauce and serve with spinach, chive potatoes and lemon zest.
