Preheat oven to 425F.
Take sea bass out of the wrapping and rinse inside and out under cold water.
Place on a rimmed sheet and dry with paper towels.
In a large mixing bowl add the shallots, garlic, cherry tomatoes, green olives, olive oil and salt and mix.
Place fish in a large baking dish, and add a pinch of salt on the inside and outside of the sea bass.
Pour the seasoned tomato mix around the fish and bake in the oven on the middle rack for 16 minutes.
Then place on the top rack and broil for 2 minutes.
The fish is cooked when the internal temperature reaches 145°F (63°C).
Add chopped basil.
Delicious spooned onto crusty bread, long grain rice or roasted potatoes.
