Preheat oven to 350°F (180°C). Make diagonal cuts in the fat of the breasts.In a frying pan, sear breasts on each side, fat side first.Brush maple syrup on the fat of the breasts and cook in the oven 5 to 8 minutes. Set aside.Sweat the shallots. Deglaze with the vinegar. Add maple syrup and the apples. Caramelize the apples lightly. Add beef broth. Thicken with corn starch diluted in a little cold water. Season to taste.Cut the breasts diagonally in thin slices. Serve immediately with a drizzle of sauce.
