Pour onto eclairs, spreading with a spoon to make an even layer. Sprinkle with raspberries.Stir together raspberry jelly and boiling water in another bowl until gelatin has dissolved. Let cool 10 minutes then slowly stir in 2 cups AHA Peach + Honey sparkling water until combined. Ladle jelly mixture gently on top of raspberries so as not to disturb the pudding layer. Chill uncovered for 2-3 hours until set.Meanwhile, in a medium bowl, stir together chopped peaches, 1/3 cup AHA Peach+ Honey sparkling water, honey, and mint. Cover and chill until ready to use.When the jelly has set, top with cubed loaf cake and spoon peach mixture evenly over top.
