Preparation
Arrange cut side of eclair pieces pressed against the bottom edge of the bowl. Fill the centre with remaining eclairs to finish the first layer.
In a medium bowl, whisk together banana pudding mix with fairlife® 2% ultrafiltered milk for 3-5 minutes until thickened. Pour onto eclairs, spreading with a spoon to make an even layer. Sprinkle with raspberries.
Stir together raspberry jelly and boiling water in another bowl until gelatin has dissolved. Let cool 10 minutes then slowly stir in 2 cups AHA Peach + Honey sparkling water until combined. Ladle jelly mixture gently on top of raspberries so as not to disturb the pudding layer. Chill uncovered for 2-3 hours until set.
Meanwhile, in a medium bowl, stir together chopped peaches, 1/3 cup AHA Peach+ Honey sparkling water, honey, and mint. Cover and chill until ready to use.
When the jelly has set, top with cubed loaf cake and spoon peach mixture evenly over top. Whip the cream and dollop over the trifle.
Garnish with sliced peaches, raspberries, and mint leaves.
