Wash, drain and remove stems from spinach.Separate endive leaves, mince and place in a salad bowl with the spinach.Cut the apple into cubes and toss with lemon juice. Add to the spinach mixture.Add the clementines, onion and bell pepper.Toss with dressing and serve.Dressing :In a small bowl, whisk together the mustard, maple syrup and balsamic vinegar.Slowly pour the oil whisking constantly to obtain a smooth mixture.Add salt and pepper to taste.

    Spinach
  • 2
    endives
  • 1
    apple
  • 2 Tbsp.
    (30 mL)
    lemon juice
  • 2
    clementines, peeled and divided into sections
  • 1
    red onion thinly sliced
  • 1
    yellow or red bell pepper cut into pieces
  • Dressing:

  • 1 tsp.
    (5 mL)
    Dijon mustard
  • 2 Tbsp.
    (30 mL)
    Maple syrup
  • 2 Tbsp.
    (30 mL)
    balsamic vinegar
  • 1/3 cup
    (80 mL)
    olive oil

  • Salt and pepper to taste

Preparation
