Preheat oven to 200°F (95°C).In a skillet, heat 1 Tbsp. (15 mL) oil and cook tenderloin steaks to desired degree of doneness.Remove and keep warm in oven.In the same skillet, heat remaining oil and cook onion, ginger and hot pepper 2 min.Add diced fruit and cook another 2-3 min.Stir in white wine vinegar and sugar and cook 2 min. more until fruit is caramelized.Top tenderloin steaks with fruit sauce and sprinkle with coriander or parsley.Serve with orzo and fresh asparagus tips.

    beef tenderloin

    chopped hot pepper (ex: jalapeño)
