Add the onion and cook, stirring occasionally, for 8 to 10 minutes or until softened.Cook the patties in a fryer for 3 minutes or until grilled.In a small bowl, combine the mustard, maple syrup, and thyme. Spread the maple mustard on 4 slices of bread and top with baby spinach, a Vivanda Boréal patty, onions, and cheese. Cover each with another slice of bread. Brush the remaining oil on both sides of the sandwiches.Heat two sandwiches at a time in a large pan on medium for 5 minutes or until they’ve turned golden brown and the cheese has melted.
