Preheat oven to 325°F (170°C).Cover fish with spinach.Peel clementines, separate into segments. Lay on top of spinach.Roll John Dory up. Place rolled in a baking dish and bake for 20 minutes.Season to taste and serve.Suggested side dishes: Bean sprout and vegetable sauté.
