Place the pineapple wedges on a baking sheet.
Coat the pineapple wedges evenly with cane sugar.
Using a torch, melt the sugar and form a crispy top. *
Thread four pineapple wedges onto a skewer.
In a large wine glass filled with ice cubes, pour the white wine up to half the glass, then add the agave syrup and stir.
Place the the pineapple skewer in the glass.
Top up with tonic water. Stir with the skewer before drinking.
* (Oven version) : Turn oven to broil. Line a baking sheet with parchment paper and place the pineapple wedges. Coat the pineapple wedges evenly with cane sugar. Place the baking sheet on the top rack and let it grill for 5 minutes until the sugar has melted.
