An edible flower with a tender heart, it's prized for its high fiber content and minerals like magnesium and potassium. Its subtle, slightly bitter flavor lends itself to a variety of preparations: steamed, stuffed, in salads, or blended into a creamy soup. Choose a heavy, firm artichoke with tightly packed, crisp leaves. Avoid any whose leaf tips have turned black. Cook your artichokes in salted boiling water for 15 to 30 minutes, depending on their size. To check if they’re done, pierce the stem with the tip of a knife—there should be no resistance. Before cooking, make sure to clean them thoroughly. Soak them for a few minutes in warm water with white vinegar. 4084
