In a small bowl, mix brown sugar and cinnamon.
In a large bowl, add the peeled and sliced apples. Mix in the brown sugar, honey, and cinnamon reserving 1 tbsp to sprinkle on the top of the cake.
Using a hand mixer, beat together eggs and sugar until light in colour. Gradually beat in oil, juice, and vanilla. Mix in flour, baking powder, and salt.
Spread half the batter into a greased 8-inch square pan. Pour the apple mixture on top. Top with the remaining batter and spread over the apples. It is ok if the apples peek through. Sprinkle remaining brown sugar/cinnamon mixture on top of the cake.
Bake at 350°F for 45-50 minutes until the cake is cooked through and a toothpick comes out clean.
Drizzle with additional honey while cake still hot (optional) Enjoy!
