Place the rack in the middle of the oven. Preheat the oven to 375°F (190°C).Grease the cups of a muffin tin.In a large bowl, mix the flour, powdered almonds, oatmeal, baking powder, baking soda, cinnamon, ginger and salt. Set aside.In another bowl, whip together the coconut milk, egg, oil, molasses and brown sugar.Incorporate the grated apples.Pour the liquid ingredients over the dry ingredients all at once.Mix lightly with a fork.Divide the mix into the muffin tin.Divide the diced apple, slivered almonds and raw sugar over the top of each muffin.Cook for 25 minutes or until a toothpick inserted in the centre of a muffin pulls out clean.Source: K pour Katrine

Preparation
