In a saucepot, combine the butter, cider, honey, cinnamon and vanilla.Bring to a boil on high heat while stirring with a wooden spatula.Reduce the heat and let the syrup simmer for 5 minutes.When done, remove from the heat et let the syrup cool down at room temperature.Remove the seeds from the apples and cut in slices about 1/2 inch (1 ½ cm) thick.Place the apple slices in a baking dish and pour the syrup on top of them.Turn the slices around to make sure they are nicely coated.Cover and allow to marinate from 2 to 6 hours in the refrigerator.Preheat the BBQ for a direct heat cooking method.Clean the grill and brush with oil.Drain the marinating liquid from the apples in a bowl and reserve.Grill the apple slices on the barbecue 3 to 5 minutes on each side or until they become golden brown.Turn the slices to a 45° angle halfway through the cooking time to have nice grill marks.Brush some marinating liquid on top of the apples throughout the cooking process.To assemble, place one ice cream scoop in the bottom of a Martini glass, bowl or dessert plate.Add some apple slices around it.Top with some syrup and garnish with mint leaves and a stick of cinnamon.Repeat for the other portions.

    piece of fresh vanilla bean (3 inches or 8 cm) long) or 1 tsp. (5 mL) of vanilla extract
