Make a lengthwise incision in the cutlets and stuff with grated Providence Oka cheese cubes. Generously salt and pepper only one side of chicken cutlets. Drizzle with lime juice. Top cutlets with basil leaves.
Roll up cutlets to form paupiettes and secure with toothpicks, or thin string, previously soaked in water for 30 minutes.
Grill paupiettes on oiled barbecue grill over medium heat for 20 minutes, turning frequently.
Serve two paupiettes per person.
