Preheat oven to 400°F (200°C).
In a large sauté pan set over high heat, add beef, spice packet, and taco sauce; cook until the beef is browned. Remove from heat and stir in rice, corn, onion, beans, and 1/2 cup (125 ml) salsa.
Oil a 9” (23 cm) springform pan; shingle 8 tortillas along the side and bottom.
Scoop half of the taco mix onto the tortilla layer; spread evenly and sprinkle with 3/4 cup (180 ml) of cheese.
Arrange the remaining 4 tortillas on top; spread the remaining half of the mix on top and sprinkle with 3/4 cup (180 ml) cheese.
Bake covered with foil for 15 minutes; remove foil and bake further 5 minutes or until tortillas edges are golden brown.
Spread 1/2 cup (125 ml) salsa over hot pie and garnish with desired toppings.
