In a stockpot over medium-low heat, cook cabbage, carrots and leek in butter for 15 minutes, stirring often.Add beef and chicken broth, herbes salées and parsley.Bring to a boil and season. Simmer, half-covered, for 1 hour.Preheat oven to 350°F (180°C).Line a broiler pan with parchment paper. Lay ham on top and bake until crisp.To serve, spoon soup into bowls and crumble ham over top.
