Preheat oven to 350°F/180°C.Combine Dijon mustard, lemon juice, egg and pepper. Brush chicken with mustard mixture. Coat with breadcrumbs.In a large frying pan over medium heat, melt butter. Cook chicken until golden on both sides.Place chicken on a baking sheet; place cheese on top.Stir together all ingredients of honey Dijon sauce.Bake for 10 minutes or until cheese is melted and chicken is cooked through. Spoon Honey Dijon Sauce over chicken and serve immediately.
