Preheat oven to 350ºF.
In a large bowl combine sliced apples, lemon juice, brown sugar, cornstarch, cinnamon and salt. Mix well to combine. Place in a baking dish. Bake until apple slices are tender, stirring halfway through, about 30 minutes. Stir in maple syrup.
For the waffles, preheat waffle maker.
In a large bowl whisk together pancake and waffle mix with milk, cinnamon and nutmeg. Lightly grease waffle maker. Scoop heaped ½ cup portions into hot waffle maker. Cook 4-5 minutes, until golden brown.
Serve waffles with warm baked apple pie slices.
Top with lightly sweetened whip cream if you like.
