Sauce:Mix all the dry ingredients in a small bowl.While whisking, add water slowly until you have a thick sauce.Pour into a saucepan and add the remaining water.Cook over medium heat, stirring constantly until the mixture thickens.Stir in the tomato sauce.Burrito:Crumble the sausage and cook in a large saucepan over medium heat until tender.Add enchilada sauce and the next 7 ingredients (from the chipotle sauce to the cumin) in the pan.Whisk water and cornstarch together in a small bowl, add to the pan and stir.Reduce heat, simmer, cover and cook for another 15 minutes.Add the black beans and a generous amount of the “meat” mix in the middle of each tortilla.Wrap tightly and place them in a baking dish greased with vegetable oil or vegetable butter.Put a little filling on top of each burrito and sprinkle with grated cheese.Bake at 400°F (200°F) for 10 minutes until the cheese is bubbling and browned on top.Finish under broil to grill the cheese on top.
