Preparation
Ham:
Cook onion, garlic and ginger in olive oil a few minutes.
Pour in liquids and add ham to casserole dish.
Bring to a boil, then cover, reduce heat and simmer for 1 ½ hours or until meat is tender.
Preheat oven to 350ºF (160ºC).
Remove ham from casserole dish and place in a roasting pan.
Strain cooking stock and pour 1/3 into the casserole dish.
Reduce by 2/3 and mix with glaze ingredients.
Dip ham into the glaze and place in oven for 30 minutes, basting often. Serve immediately.
Green beans:
Preheat oven to 400ºF (200ºC).
In a mixing bowl, blend all ingredients except bacon.
Roll 8 beans at a time in a strip of bacon and place in oven for 20 minutes.
Sweet potato mash:
Boil potatoes until tender.
Transfer to a food processor along with butter and orange zest/juice.
Pulse ingredients until smooth and season to taste.
