Preheat oil in a deep fryer or large pot to 350°F (180°C).In a large bowl, combine dry ingredients (2 types of flour, sugar, baking powder and salt).In a separate bowl, beat the egg with 1 cup (250 mL) buttermilk.Create a hole in the middle of the dry ingredients and pour the buttermilk mixture inside.Mix well using a wooden spoon until the batter is thick and smooth.If the mixture is too dry, add 1 or 2 tbsp. buttermilk and mix well.Dry the brick of tofu using a paper towel.Cut the tofu into sticks measuring ¾ inch (2 cm) wide.Dry the tofu again to remove as much moisture as possible.Coat each tofu stick in batter one at a time. (Ensure each tofu stick is fully coated.)Fry a few tofu sticks at a time in the hot oil for 5 to 10 minutes or until the batter is golden on all sides.Remove from oil and let sit on a paper towel for a few minutes.Skewer each piece of tofu with a popsicle stick and serve with your favourite sauces.
