Preheat the oven to 210°C (425°F).In a pan, heat half of the olive on high and brown the mushrooms for 3 minutes. Add the garlic and shallots and cook for another minute. Add the spinach, wine, salt and pepper. Cook until the spinach has wilted. Remove and set aside.In the same pan, heat the rest of the oil on high. Sear the meat for one minute on each side. Place on a baking sheet.Cover every slice of pork with the spinach mixture and top with grated cheese.
