In a large pan, heat the oil, garlic, rosemary, and basil on medium and bring to a boil for 2 to 3 minutes. Remove from the heat. Let the oil infuse for 1 or 2 hours. Remove the springs. Set aside.Preheat the oven to 200°C (400°F).Place the cherry tomatoes in a pan. Season with salt and pepper. Coat with the infused olive oil.Bake in the oven for 10 to 15 minutes or until the tomatoes start to split.Add chunks of the cheese on top and let it melt.Serve with toast.

    olive oil
  • 4
    garlic clove, crushed
  • 1 sprig
    fresh rosemary
  • 1 sprig
    fresh basil
  • 12-15
    cherry tomatoes of various colours and still on the vine
  • 1
    burrata cheese
  • To taste
    fleur de sel and freshly ground pepper

  • fresh basil, chopped
