Prepare the macaroni according to package directions; drain well and keep warm. Meanwhile, set a Dutch oven over medium-high heat. Crumble in the beef. Add the onion, garlic, Italian seasoning, salt and pepper. Cook, stirring, for 5 minutes or until beef is browned.Pour in the tomatoes and bring to a boil; reduce the heat and simmer, stirring occasionally, for 15 minutes or until slightly thickened. Stir in the cooked macaroni, cottage cheese, spinach, mozzarella and Parmesan. Cook, stirring often, for 3 to 5 minutes or until heated through and spinach is wilted.Making lasagna is typically a time consuming process, but our shortcut version is ready with much less fuss. Kids will love the chunks of gooey cheese and won't even notice the spinach! Serve with a tossed salad to complete the meal.
