In a skillet, heat 1 Tbsp. (15 mL) of oil and cook steaks to desired degree of doneness. Remove and keep warm.In the same skillet, add remaining oil and fry onion and mushrooms a few minutes.Deglaze skillet with wine and reduce until liquid is almost completely gone.Add demi-glace sauce and simmer for 3 minutes.Remove from heat, add Dijon mustard and cook 1 minute, stirring to blend thoroughly. Season to taste.Pour mushroom sauce over steaks and sprinkle with parsley.

Preparation
