In a large pot, heat the oil on medium high and cook the onion for about 6 minutes while stirring frequently.Add the sweet potatoes and Cajun spice mix and cook for another 2 minutes.Add the tomatoes, corn kernels, black beans, and 3 tablespoons of maple syrup. Season with salt and pepper and cook for another 3 minutes.Add the vegetable broth and bring to a boil.Cover and cook on low for 20 minutes or until the sweet potatoes are soft.Add the rest of the maple syrup and stir well. Season to taste. Serve with guacamole and top with cilantro.Good to know:My favourite Cajun spice mix is by Les soeurs en vrac.
