Blend the two cheeses together until smooth, adding cream as needed.Using a pastry bag with a small tip, pipe cheese mixture into litchis.Place each stuffed litchi on a leaf of baby spinach and refrigerate until time to serve them.

    Blue cheese, crumbled

    cream cheese, room temperature

  • whipping cream 35 %, as required

  • baby spinach, as required

Preparation

Drain litchis.

In a sieve over a bowl, press crumbled blue cheese with the back of a spoon. Blend the two cheeses together until smooth, adding cream as needed.

Using a pastry bag with a small tip, pipe cheese mixture into litchis.

Place each stuffed litchi on a leaf of baby spinach and refrigerate until time to serve them.
