Preparation
Preheat the oven to 400°F (200°C).
Prepare Bechamel sauce (see below)
Add ham on one of the bread slice.
Slather with 2 tbsp of béchamel sauce and add parsley.
Close the sandwich with the other bread slice.
Spread 2 Tbsp. of béchamel sauce, Emmental cheese and paprika.
Bake for 15 minutes or until the cheese is lightly brown. End with grill.
Béchamel cheese sauce:
In a saucepan, melt butter on low heat.
Add flour and stir with a wooden spoon, cooking mixture until a yellow mixture is obtained (no bubbles).
Pour in milk and stir constantly until thick.
Salt and pepper to taste and let simmer on very low heat for 15 to 20 minutes.
Add the cheese and stir until it is melted and combined. Let cool.
