Preheat the oven to 375°F (190°C).Stir-fry the shallots, garlic, pepper, mushrooms and tomato in the butter for 3 to 4 minutes.Sprinkle on the flour, and cook over low heat for 1 minute, stirring constantly.Add the hot milk gradually and cook over low heat until the sauce thickens, about 4 minutes.Add the cheese, ham and coriander.Continue cooking for 1 minute.Wrap the tortillas in tin foil and place in the oven for 4 to 5 minutes.Arrange the ham-based mixture in the centre of each tortilla and roll like crêpes.Garnish with fruit salsa.
