Soak skewers in water for 30 minutes.Preheat oven to 450°F (220°C).Line a baking sheet with parchment paper.In a medium bowl, stir Coca-Cola with hoisin, finely grated peel of 1 lime and 2 Tbsp. (30 mL) lime juice, garlic, ginger and hot sauce.Slice chicken length-wise into thin, ½ inch (1-cm) strips.Add chicken to marinade. Stir. (This can be done the night before, cover and refrigerate until ready to cook)Remove chicken from marinade; discard marinade.Thread 1 or 2 strips onto each skewer (depending on length of strip) in a waxy fashion.Place on baking sheet.Sprinkle with salt.Cook 8 minutes, turn, continue to cook 2 to 5 more minutes.Swish chicken in sauce that has gathered on baking sheet.Serve on a platter, garnished with thin lime wedges and coriander.Tip:If serving for dinner, use 3 or 4 chicken breasts with the same amount of marinade and leave chicken whole. Increase cooking time by 15 minutes, turning halfway through.

  • 1/2 cup

    carbonated beverage Coca-Cola
  • 1/4 cup
    (60 mL)
    hoisin sauce
  • 1
    lime

  • 1 tsp.

  • hot sauce to taste
