In a large pot, heat the oil on medium and brown the celery, carrot, and onion for about 6 minutes. Stir occasionally. Add the water and scrape the bottom of the pot. Add the chicken carcass.Add the bay leaf, pepper, and thyme. Simmer with the lid on for 40-45 minutes.Strain the stock through a fine mesh sieve over a bowl.
