Preparation
Follow the ingredients’ order
Start the grill from the oven.
Line a baking sheet with parchment paper.
In a small bowl, combine all spices except salt and pepper.
Put the cauliflower in a large bowl, add a drizzle of olive oil and mix.
Add the spice mixture and mix to coat each cauliflower.
Spread the cauliflower over the baking sheet.
Season with salt and pepper to taste.
Place the plate in the center of the oven and grill for 5 minutes.
Turn over and continue cooking for another 5 to 7 minutes, until cauliflower is tender and golden brown.
Meanwhile, in a skillet, grill the almonds. Reserve.
Put a drizzle of oil in the skillet.
Sauté the dried fruit and chickpeas (optional) for 3 to 4 minutes.
Combine cauliflower and dried fruit mixture.
Add parsley when serving
It can also be turned into a vegan main dish by adding chickpeas.
