Cut the cauliflower into small florets measuring at most 1 cm. Boil with all the other ingredients for about 15-20 minutes (until the cauliflower starts to fall apart on its own). Use a potato masher to mash but not enough to make a completely smooth texture.Pour a spoonful of the cauliflower mixture onto each oyster (which have been opened, I used Malpeque oysters from Metro).Cook a few slices of bacon until they are crispy. Crumble them.Add the bacon on the cauliflower mixture.Add grated sharp cheddar.Put the oysters on a baking sheet and broil until the cheese is melted and oysters are grilled.Remove from oven and top with a few edible flowers (optional), some chopped chives, and a bit of lemon zest. Serve while still hot!

    horseradish
  • 250 ml
    15 % cooking cream
  • 100 ml
    water

  • salt and pepper

  • sharp cheddar

  • lemon zest

  • chives chopped

  • a few slices of bacon

  • Edible decorative flowers (optional)
