In a saucepan over medium heat, heat the olive oil and cook the onion, jalapeño pepper, garlic and bell pepper for 5 minutes.Add the sausage meat, taking care to break up the meat into small pieces with a spatula. Cook for 5 minutes.Add cumin, chili powder, smoked paprika and stir to coat the meat and vegetables with the spices. Continue cooking for 2 minutes.Deglaze with red wine and reduce by half.Add the meat sauce, chili sauce, Worcestershire sauce, red beans, coriander and cherry tomatoes. Mix everything together and let simmer for 25 minutes.Add the corn and continue cooking for 5 minutes.Serve with sour cream, lime wedges and cilantro.Source: Pete Authentique

Preparation
