Preheat the oven to 350°F.In a large mixing bowl, toss together the peaches, brown sugar, lemon juice and 2 tablespoons (30 ml) of bourbon. Let stand for 15 minutes.In a 12-inch (30 cm) cast-iron skillet, melt the butter and swirl to coat the pan. Set aside.In a large mixing bowl, stir together the flour, sugar, cinnamon, baking powder and salt.Add the eggs, yogurt, milk, vanilla and remaining bourbon. Stir until the batter is smooth.Transfer batter to the buttered skillet and scatter with the peach mixture. Add a few tablespoons of juices from the peaches.Bake until the cobbler is cooked throughout and golden brown, about 45 minutes. Let cool slightly before serving.When ready to serve, top with a scoop of peach ice cream and enjoy!
