Bring a large saucepan of salted water to a boil. Add the macaroni and cook until al dente.Drain, cover and keep warm.In a large saucepan, place the pancetta and cook over high heat, stirring for 4 minutes or until browned and crisp. Drain on paper towel.In the same saucepan, heat butter over medium heat, add flour, stirring 1 minute and add milk stirring continuously until mixture thickens.Add the cheeses, garlic, tabasco and paprika and stir until the cheeses have melted, about 5 minutes.Add the macaroni and pancetta until heated through, 2 minutes Add the chives.Spread over the pasta bread crumbs and bake until golden brown.
