Heat oven to 400F.Melt butter and olive oil in a large pan over medium heat. Add onions, sugar and a good sprinkling of salt and pepper. Cook onions, stirring often, until golden brown, about 15 minutes. Add mushrooms, thyme and basil to pan and cook, stirring often, until mushrooms are golden brown and tender, about 10 more minutes.Line the bottom of an 8” round baking tin with parchment paper. Scrape the mushroom mixture into the pan. Top with puff pastry, tucking edges into pan. Place in the oven and bake until pastry is golden brown, about 30-35 minutes. Remove from oven and let cool 5 minutes. Invert onto a plate. Garnish with extra herbs.
