Hollandaise sauce :In a small pot, add the olive oil, nutritional yeast, cornstarch, lemon juice, Dijon mustard, turmeric, and cayenne pepper. Use a whisk to combine all the ingredients until you get a smooth batter.Heat on medium high and incorporate half (half a cup) of the soy beverage. Whisk. Heat for about 1 minute.Add the remaining soy beverage and heat for 3 to 4 minutes while regularly whisking. Remove from the heat when the sauce has thickened. Set aside.Pan-friend tofu :Slice the block of tofu horizontally so you get 4 rectangles and then slice each piece into 2 so you get a total of 8 squares. Place the slices onto a clean, dry piece of cloth and pat dry.Heat the olive oil in a non-stick pan on medium high. Add the slices of tofu and season lightly with salt. Heat each side for about 3 minutes until the tofu is hot and slightly golden brown.Assembly :Slice the English muffins and toast in the toaster or oven.Top each half of the English muffin with a slice of tomato, greens, and a slice of tofu. Add the sauce and a drizzle of olive oil. Season with salt and pepper to taste. Serve immediately.Note: the sauce can be prepared ahead of time and heated in the microwave or a pot before serving. Preparation

Hollandaise sauce :
